Today has been a super productive day so I come to you with this super easy, comforting tomato soup! It is getting warmer here in Indiana but it’s still too cold for my liking. I’m still camping out on the couch buried in a blanket during the day. All I have been wanting to eat is soup, soup and more soup. In this case, with a side of grilled cheese. Nothing more nostalgic than that right?
Soup is one of those things that look like they might be complicated to make but literally always are the easiest thing ever to make. Throw everything in a pot and heat? It can not get easier than that. I am a pretty big fan of a certain grocery chain’s tomato basil soup but then I figured it’s just as easy to make this than to drive all the way to the store, dump the soup in a pan and heat. Plus, this makes a ton of tomato soup. Since I went back to school full-time, I’m all about the budget life! (Except coffee. Me and my favorite coffee chain are in a lifelong relationship at this point.)
Anyways, on to the main point, this soup! Make it, you won’t be disappointed. Maybe make a grilled cheese sandwich while you’re at it. I can say from personal experience that dipping a freshly grilled cheese sandwich into this tomato soup is freaking divine. Hit. The. Spot. Delicious to the point where I may or may not have made another sandwich to enjoy with my remaining soup.
