Woot woot! I’m coming back at you with one of my favorite recipes… but with an Autumn twist! I’m still a waffle lover, but sometimes I like to switch it up from my usual classic waffle that I usually have. The weather here has changed to chillier days, pumpkins are everywhere and I can’t help but crave pumpkin flavored everything. I know it’s pretty basic but I can’t resist the pull of the Autumn season! So I went right to work tweaking a new recipe for a pumpkin waffle.

As usual, this pumpkin waffle recipe is super easy to make and is ready in under 10 minutes. I don’t know about you, but I’m pretty grumpy and slow in the mornings. I don’t have the patience for long and complicated breakfast recipes in the mornings, especially during the weekdays when I’m busy with work. Right now I’m juggling three jobs right now (secret plans coming soon… hehe) so I need recipes that need little effort and time. That can be pretty hard to find sometimes!

There is nothing better than that pumpkiny smell when you mix all of these ingredients together! It had me really excited in the morning when I was making it. It smells so good! I slathered mine with Canadian maple syrup and a little butter and it was divine. It was even better with some warm black tea. Now that the weather has gotten chilly and the leaves are dropping off of the trees I find myself reaching for tea in the morning and evenings rather than coffee. It just feels so right and hits the spot! I’ve also been loving my rakas mug that my husband got me from his last trip to Finland. Rakas is a term of endearment in Finnish, much like darling in English. Sweet, right?

You should give this lovely Autumn twist on waffles a try. You won’t regret it! Not only is it delicious, but pumpkin has many nutritional benefits as well. It’s full of antioxidants and vitamins, making this healthier than usual. 🙂 And pumpkin is just plain delicious.

Pumpkin Waffle for One
Easy, delicious pumpkin waffle for one person. Ready in 10 minutes or less! The perfect Autumn/Fall Brunch option.

Ingredients
  • 1/3 cup flour
  • 1 pinch salt
  • 3/4 tsp baking powder
  • 2 tsp sugar
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup whole milk You can use other milks, but full fat has the best taste in my opinion!
  • 1 1/2 tbsp pumpkin puree Not pumpkin pie filling!
  • 3 drops vanilla extract
  • 1 egg, beaten
  • 1 Tbsp butter, melted
Course Breakfast/Brunch
Prep Time 5 minutes
Cook Time 5 minutes

Instructions
  1. Combine dry ingredients together in a medium bowl. In a small bowl, combine the milk, egg, melted butter and vanilla. Stir to combine, and pour into the dry mixture. Mix until incorporated. Pour into prepared waffle maker and cook according to the settings provided with your model. Mine cooked in about 5 minutes. Slather with butter and maple syrup and serve your waffle for one!
Recipe Notes

You can easily make your own pumpkin spice mixture by combining ground cinnamon, ground ginger, nutmeg, ground allspice, and ground cloves together if you don't have pumpkin pie spice. It saves you quite a bit of money as well!
