Whew, another crazy week! My time is really flying during my student teaching in preschool. It is crazy to think that in two weeks I will be starting my Kindergarten placement! Before I know it, it will be time for graduation. 🙂
I’m really excited about graduating, but I’ve been feeling blue lately about leaving college. I’ve had a great experience at Indiana University during these last four years of living here. Since I’m rarely on campus anymore because of student teaching in an actual school, when I go back on campus I feel really weird.
To top off this meloncoly feeling that seems to be following me everywhere, the weather has been so gloomy and rainy lately! It makes getting out of bed super hard. However, the first day of Fall has come and passed! I love fall so much; the food, the trees, the weather, everything!
And best of all? Soups. 😉
I made an awesome sausage and kale soup yesterday. I’m not one to jump on the superfood bandwagon, but I have been trying to pick up a new vegetable every time that I go to the supermarket to try. This week was kale. I was a little skeptical at first, but it was so delicious in this soup.
The recipe came from Laura in the Kitchen, a youtube food guru. I absolutely love her recipes; she is really easy to follow, has a great personality and just makes easy, good food. She is my kind of woman. 😉
