  1. Combine the red lentils, water, carrot, onion, potato, rice and olive oil in a large pan.
  2. Over medium heat, simmer until lentils are cooked through (about 30 minutes) and vegetables are tender. Skim off the scum that floats to the surface.
  3. Once cooked, add the butter and all the spices. Take off of the heat.
  4. Blend or eat the soup chunky as it is. Top with more mint and red pepper if you’d like. Bon appetit!
