It’s a snow day today! What better thing to eat than a hearty red lentil soup as the snow is piling up outside and you have no intention of going leaving the house? Soup and hot chocolate are winter staples in my household!
Out of all of the soups, my favorite to make is this Turkish style red lentil soup. I first ate it in a Turkish restaurant years ago and knew I had to figure out how to make it at home. I was really excited to see how simple it was to make and it wasn’t hard at all to tweak it to fit the taste I was wanting. Simple means I’m making it all of the time!
This recipe is vegetarian, if that is your thing. Red lentils are hearty and filling so it hits the spot on cold days where you just want to huddle under your blanket in your pajamas all day. For something so simple, the taste is just amazing!
In the past week, I’ve made this red lentil soup three times. It is very easy to throw together and it’s done so quickly. Since it doesn’t need meat, it is also a great budget option. When we run out of meat this is the first thing on my list to make as I always have a protein packed bag of red lentils in the pantry.
