
Summer is flying by, so why not try out this summer veggie pasta before fall hits you with pumpkin everything?
Yummy and filling and slightly sweet from the corn. Would definitely recommend this as an easy meal to throw together when you’re busy and want to eat something good!

Ingredients
- 1/2 cup penne pasta
- 1 corn cobb, corn removed
- 1/4 cup zucchini, chopped
- 1/4 cup red lentils
- 1/4 cup pasta sauce
- 1 tsp flax seed, ground
- 2 tbsp hemp hearts
- 1 tbsp ghee
- salt and pepper to taste
- 1/2 tsp garlic powder

Instructions
- In a medium saucepan, cook your pasta according to instructions on the bag. While boiling, add the red lentils.
- While the pasta and lentils are cooking, grab a small sauté pan and add your ghee, zucchini, corn, salt, pepper and garlic powder. Sauté until well cooked.
- Drain the pasta and lentils. Add back to the pan and add the pasta sauce, hemp hearts, ground flax seed and veggie sauté mix. Mix all together and bon appetit!
