Instructions
  1. Combine the nuts and unsweetened coconut in a food processor. Pulse until crumbly, but not sticky.
  2. Add your dates, peanut butter and vanilla. Pulse until it comes together.
  3. Roll into balls and enjoy! For a firmer ball, set in the refrigerator for 30 minutes. These can be stored in the refrigerator for up to a week, or even longer in the freezer.
