Shortbread
  1. Preheat your oven to 300 degrees F. Mix the almond flour, salt and sweetener in a medium bowl. Add in the softened butter and knead until incorporated. Mix in the egg and vanilla. Spread in an 8×8 pan and cook for 25-30 minutes. Let cool before moving onto adding the next layer.
Cream Cheese Layer
  1. In a medium bowl, mix the cream cheese and sweetener together until creamy. In a large bowl, add the heavy cream and whisk until stiff peaks form. Add this to the cream cheese mixture. Spread over the cooled shortbread.
Strawberry Layer
  1. Prepare your strawberries and layer them over the cream cheese layer. In a saucepan, boil 1 cup of water and add the packets of jello and cornstarch. Take off the heat and stir for two minutes or until completely dissolved. Add in another cup of water. Let cool on the counter until cool to the touch. Once cool, slowly pour over the strawberries in the pan. Leave in refrigerator for four hours or until set. Bon appetit!
