Alright, I’ll be honest. I may be eating mostly keto, but my sweet tooth is still alive and well. I know there are some super strict keto people out there that cut sweets out entirely but that just doesn’t work for me. Thank God for berries! Cutting out fruit was harder than I thought it would be. I didn’t really eat berries that often before, but boy do I appreciate them now!
I’ve always been a huge follower of food shows. It started from a young age too! I remember spending hours and hours in front of the television at my Dad’s house watching food network at night with my sister. We didn’t have cable at my Mom’s house, so it was a real treat to have it when we were visiting Dad. We weren’t eating fancy at all at that time and those shows just showed us how many different foods there were out there waiting to be eaten! Yes, we started our foodie life young. Does anyone remember the old Iron Chef with the crazy Japanese guy who would take a big bite out of a pepper during the show’s intro? Memories.
I’m still following food shows, but instead I’m mostly on YouTube and browsing blogs for recipes. When I saw a recipe from Laura in the Kitchen for a strawberry pie, I knew this could be modified without breaking my eating style. And modify it I did! This is really friendly for low-carb eaters as berries are lower in carbohydrates than other fruits. With a few switches here and there, one slice of this strawberry pie is just 9.2g net carbs. I definitely don’t eat sweets every day like I used to. Having these options as a treat once in awhile is a lifesaver for me when I’m craving something a little sweet!
With summer here and it’s abundance of fresh berries, it is the perfect time to utilize some strawberries. Best of all, the strawberry pie filling sets in the fridge so you can eat something cool and refreshing in this hot weather. Happy eating! 🙂
