Have you heard of keto? No? Well, that was me a few months ago too. My sister excitedly told me about this way of eating and I have watched over her as she lost weight. She said it was easy. That it wasn’t a “diet”, but a way of eating (WOE). Since I have been struggling with my weight myself and it worked out so well for her, I figured I would give it a try. On keto the ideal is to keep your macros for the day around 70% fat, 25% protein and 5% carbohydrates. No sugar, no rice, no pasta, no bread… when I first heard about it, I thought it was torture. Let’s face it – on the surface when you hear fat it doesn’t trigger happy feelings in your mind. And 70% of my whole meal intake for the day had to be fat? To be honest it sounded kind of disgusting.
But boy oh boy was I wrong. I’ve never felt better while eating keto!
Surprisingly enough, changing my way of eating was not that hard. It turns out that fat is delicious haha. Most of my fats come from butter, cheese, meat and avocado. At this point I’m eating like half of an avocado a day. I can’t say I’m hating it! After being on lazy keto for a few weeks, I made the jump to eating keto full time. I have had so much more energy since changing and my crazy food cravings are almost non-existent! As someone who has struggled with dieting for what feels like my whole life, this has been a game changer for me. To make it even better, I’ve been consistently losing weight since I started.
As always, lunch at school is my hardest meal of the day because it needs to be prepared in advance. I loved the salad in a jar concept just for how convenient it is to transport to school. This pesto chicken salad is keto-friendly, delicious and a snap to make!
Since starting keto, I always have a very fat heavy breakfast in the morning. Most days I don’t even feel hungry until the evening! I seem to also feel ravenous during the day so not feeling the urge to snack on something or eat a full meal is a huge deal. I’m so guilty of stopping by my favorite fast food place on the way home from work just because I felt so hungry and HAD to eat something. I struggled so badly with the feeling of needing to stuff whatever I could into my mouth because I felt so hungry! It is so freeing to not feel that way anymore.
Can it get any easier than layering ingredients and then giving it a good shake when you are ready to eat? There really are a ton of ways to change up salad in a jar, so feel free to get creative with your ingredients. Don’t like balsamic dressing? Try something different! Different cheeses? Different lettuce?
One serving of this yummy salad has 512 calories, 26g of fat, 55g of protein and 13g of carbohydrates (10g if you count net carbs).
