Instructions
  1. Preheat oven to 350 F.
  2. Line two small loaf pans with parchment paper.
  3. Combine the avocado, butter, vanilla, heavy whipping cream, and eggs into a food processor or blender. Blend until smooth.
  4. Combine the erithrytol sweetener, almond flour, cacao powder, baking soda, salt, instant coffee granules and chopped dark chocolate to a large bowl. Mix well.
  5. Pour the avocado mixture into the flour mixture. Mix until just combined.
  6. Spread the batter between the two loaf pans, using a spatula to flatten the batter.
  7. Bake for 45 minutes, or until a fork inserted into the center comes out clean.
  8. Cool on counter for 15 minutes. Drizzle heavy whipping cream over the top.
