Chocolate. A girl’s best friend right? In fact, it is even healthy for you. If it is dark chocolate that is.
I thought I was a chocolate connoisseur but I actually only ate milk chocolate most of the time. My friend Maria is nuts about dark chocolate (the one that is healthy for you haha) but I was having none of that bitterness! Home girl was always on the run for some dark chocolate, and any chance she got she included it in our baked goods. She would be shocked to see me now making this mocha bread using 100% dark chocolate!
Not only does this have 100% dark chocolate but it also uses avocado too. I know, crazy right? It is a double whammy of antioxidants! You won’t taste the avocado at all in this I swear, but you will come out with the moistest bread you have ever seen.
Now, when I first got this dark chocolate I made a huge mistake. Usually when I’m baking I’m dipping into ingredients for a taste all over the place. Without thinking, I popped a whole piece in my mouth. Yeah… still not a fan of dark chocolate. It’s so bitter! Don’t worry though, with some sweetener the chocolate really takes on a whole new life in this mocha bread!
I’m always shocked how well baking with almond flour goes. Where has this been all of my life? I really enjoyed this mocha bread on it’s own, but it was even better with a pat of peanut butter smeared on the top. The coffee isn’t an overwhelming flavor, but there is enough caffeine in here to give you a pep in your step after eating a slice!
