Salads again? That is what my sister told me when I was talking to her about me having this avocado chicken salad. Yes, again! I don’t know what it is exactly but salads just hit the spot in the summer time. It’s grilling season! Vegetables and fruits are plentiful! It just makes sense. Don’t even get me started on avocado… I could literally eat an entire avocado a day. Some days I even do. Just another #basicwhitegirl trait to add to my arsenal haha.

I’ve been eating a lot of salads because quite frankly, I don’t want to turn the oven on. It’s hot outside and air conditioning is a god-send in the summer. I just want to veg out in my air conditioned house as much as I can. I know some people get all psyched about summer and being in the sun but I’m the total opposite. I hate being sweaty. I’d rather go out when it cools down into the evening! Since my husband is used to heat I can throw him out on the grill whenever I want and he is happy to oblige because grilling is seen as manly and all that. I won’t complain!

Keto and salads go together like peanut butter and jelly so I’ve been going at it with the salad combinations. Avocado makes everything taste better and oh man, is it tasty in this keto avocado chicken salad! I’ve become a pro at buying the perfect avocado after wasting what seemed like a bajillion avocadosĀ because they had gone bad. It’s a rough time in my life I don’t like to remember haha.

When I slice into an avocado and I see that bright green color I get so freaking excited. Another avocado lives today! Plus, there is nothing more disappointing than deciding to eat an avocado and then finding that it went bad and thus, you are avocado-less. šŸ™ It has happened to me too many times.

Salads are also just awesome because you get all of your nutrients together at once and you only need one container. They are light so you don’t get that full, lazy feeling after eating. I used to overeat so much – I was definitely raised in a family where you eat everything on your plate. Sometimes I feel like I have an instinct to just finish things. Instead of listening to my body, I just focus on the food. Now that I have curbed that habit, it is such a nice feeling to eat until I’m full and still have energy to get up and do things. Before I just felt so lazy and drowsy.

Ingredients
  • 1/2 lb chicken thighs, cut into chunks
  • 2 avocados, cut into chunks
  • 1/4 cup red onions, sliced
  • 1 cup cucumbers, halved and sliced
  • 1/4 cup cilantro, roughly chopped
  • 2 tsp lemon juice
  • 1/4 cup olive oil
  • salt and pepper to taste
  • 5 cherry tomatoes, halved, optional

  • 1/2 lb chicken thighs, cut into chunks
  • 2 avocados, cut into chunks
  • 1/4 cup red onions, sliced
  • 1 cup cucumbers, halved and sliced
  • 1/4 cup cilantro, roughly chopped
  • 2 tsp lemon juice
  • 1/4 cup olive oil
  • salt and pepper to taste
  • 5 cherry tomatoes, halved, optional
Instructions
  1. Season chicken with salt and pepper. Add the thinly sliced chicken to a grill at medium high heat, and cook on each side for about 12-15 minutes, until cooked thoroughly and slightly charred.
  2. In a small bowl, add in olive oil, lemon juice, and salt and pepper. Whisk to create a dressing.
  3. Pour dressing over ingredients in large bowl. Gently toss ingredients together, to ensure that the dressing coats all the ingredients.
  4. Serve immediately.
