Chocolate Pistachio Stuffed Dates

Instructions
  1. Cut a slit into each date and remove the seed. Discard.
  2. Remove pistachio nuts from shell, reserving 1/8 of a cup for decoration.
  3. Stuff 2-3 pistachio nuts into the area where the seed used to be. Squeeze closed.
  4. Melt milk chocolate candy melts in the microwave for 30 seconds at a time until melted. Stir in between.
  5. Dip the dates in the chocolate and set on a baking pan lined with parchment paper.
  6. Blitz the remaining pistachio nuts in a food processor. Sprinkle on top of the chocolate dipped dates.
  7. Set aside until chocolate has set. Enjoy!
