I love Chinese takeout like a lot of people. But the truth is, most of that stuff is fried and filled with fat and little nutritional value. I was totally craving the deep fried goodness of orange chicken today… but with my new life plan, I knew it wasn’t going to happen. I’m trying to make healthy eating choices and fried things are a no-no most of the time.
I’m already a fan of Laura Vitale on YouTube and I watch her frequently. She also appears on another YouTube channel called Everyday Health in a segment called Recipe Rehab. In these episodes, two chefs battle each other to recreate a notoriously unhealthy dish that slashes both the fat and calories to a more manageable number. I was excited to see that they had uploaded an easy recipe for orange chicken. It was a sign; I had to make it.
I’m so glad I did. I added mushrooms, matchstick carrots and onions to mine when I made the sauce and it turned out fantastic. I honestly missed none of the flavor of the more unhealthy version of this dish.
I love finding recipes like this. I’m looking forward to trying out their healthy chicken parmesan next!
