Oh how I love pumpkin pie. I’m not sure how I ended up being the only one in my family obsessed with it, but here I am. I mean, it makes sense… my name is Autumn after all. I have to love all things related to the fall season! I embrace it all. Pumpkins, tea, apple cider, cool days sipping on hot chocolate? There are so many food related fall things that there are too many to mention.
Speaking of fall… any pumpkin spice latte fans out there? When I got the early invite to get it at Starbucks last week you better believe I hightailed it to the nearest Starbucks on my way to work that day! Ever since then, I’ve been dreaming of fall and all the beauty that comes with it even if we are still having 90 degree weather here in Indiana. A few weeks ago we had a whole week of cool, 60 degree weather that makes me wish for fall even more! Darn mother nature!!
That’s OK though because I can still pretend it is fall until we get the real thing. And since I could eat copious amounts of pumpkin flavored anything year-round, I decided to whip up a super easy no bake pumpkin pie. I LOVE no bake pies because I’m so busy. I know everyone is always complaining about being busy but I really am! I put the time into cooking fresh food but when it comes to dessert I’m too exhausted to spend time making it and then baking it. I get to do other things and hate waiting around to take it out of the oven at the right time. So yesterday before heading out to teach Sunday school, I dumped the ingredients for this pie into my set it in the freezer and voila! Pie perfection when I got home four hours later. 😀
The crust can’t be any easier with just crushed biscuit cookies and melted butter. Pat it into your pie pan and you are ready to get started on the filling! I bought these cookies a few months ago at Kroger when they were on sale and since then I’ve been obsessed they are so good. They even have a biscuit cookie spread but I haven’t gone that far over into the dark side yet. 😉
The cream cheese filling is super creamy with just the right amount of pumpkin and spice. I like to use pure pumpkin so I can control the spice level, but I’m sure pumpkin pie filling would work as well in a pinch. Seriously, it took all of my control not to just start eating this by the spoonful. Homemade whipped cream folded in takes this really over the top. If you aren’t feeling pie, this would be an awesome pumpkin pie dip too!
This is the perfect pie for this holiday season, and if you are anything like me you can’t wait for all of that fall baking! I have so many memories related to smell. I can vividly smell and remember waking up to the smell of my Mom toasting copious amounts of bread for stuffing and apple pies cooking in the oven. I swear this stuff is happiness in a smell for me. There are just so many things to love about fall.
Speaking of fall smells… I’m a HUGE fan of all of the fall scents that come out each year. I’ll take them all! My two frontrunners this year are from Glade®. They ‘re Limited Edition Fall Collection at Kroger and they smell so good. My favorite is Pumpkin Pitstop™ for obvious reasons (it has a picture of pumpkin pie on the bottle!) but Hit the Road™ really helps bring out the feelings of a cool fall day. So relaxing! Even if it’s 90 degrees outside right now, the candle transforms my living room with a fall twist. 🙂 We’ve been doing a lot of remodeling lately so things are a little wacky. I’ve been trying to cozy it up any way I can while we are changing some things and smelly good rooms definitely help out quite a bit! 🙂
I’m a huge fan of their plug in scented oils for my bathrooms. The smell isn’t overpowering and just hits you with the right amount of fall inspiration. 🙂 I actually got the premium room spray in Pumpkin Pitstop™ which is what inspired me to whip up this delicious no bake pumpkin pie! Pumpkin is hands down one of the best smells for Fall. I love spraying it in each of my rooms; you can’t get more fall season than that!
No Bake Pumpkin Pie
Serving Size: 8
16 Biscuit Cookies, crushed
2 tablespoons unsalted butter, melted
8 ounces cream cheese
1 cup pure pumpkin
2 tsp vanilla extract
1/2 cup sugar
2 tsp pumpkin pie spice
1 pint heavy whipping cream
1/4 cup powdered sugar
1 tsp vanilla
- In your pie pan, mix together the crushed biscuit cookies and the melted butter. Pat it down to fit into your pan and put it in the freezer while you prepare the whipped cream and filling.
- In your electric mixer, add the entire pint of heavy whipping cream, the powdered sugar and vanilla. Beat until you reach whipped cream consistency. When you take out your beater the whipped cream should hold it’s shape. Set aside in the refrigerator in another bowl.
- Clean the electric mixer and add in the cream cheese. Add in the pumpkin, vanilla, sugar and pumpkin pie spice. Beat until creamy, using a spatula to scrape down the sides as needed. Once creamy, fold in half of the whipped cream.
- Pour the mixture into the biscuit crust and top with the remaining whipped cream. Keep in the freezer until ready to eat. Two to three hours should do it.
