I’m so tired! Between teaching preschool all day, working on my blog and taking care of my house I’m completely exhausted the entire week. Recently I’ve had to adjust my hours at work so I’m working very late three days of the week and it’s just made me more tired! By the time I get home, I don’t want to cook or do anything other than sit my butt on the couch. I feel like it’s a little worse since I teach 14 preschoolers every day, by the end of the day I just want to be somewhere quiet by myself.
One of the things that is the most stressful for me is getting dinner on the table. Now, I actually love to cook! There is nothing more satisfying than spending the time to make a great meal from scratch. I find it really relaxing to take my time cooking something delicious, and I usually spend a good amount of time cooking and baking on Sundays. But on the weekdays it can especially feel like a chore because I literally have to come home and get cooking right away. I hate it! The hubby and I are both starving at that point in the day and we both don’t want to make any effort. I had to delegate those special cooking totally from scratch days to the weekends or days where I still had energy left!
Thankfully, there are some options out there that get dinner on the table quickly without sacrificing quality. I tend to gravitate towards recipes that have a lot of ingredients and take a long time but it’s just not practical for the weekdays! Thankfully Sam’s Club has high-quality seafood and everything you need to make an incredibly delicious and easy meal. I’ve been trying to eat more seafood lately for their nutritional benefits. Sam’s Club has a pretty large selection of both fresh and frozen seafood for good prices. Fish can be pricy so it’s better to buy in bulk!
Seafood is so easy to make and salmon is one of my favorite fish to cook. I grabbed a bag of frozen C. Wirthy & Co. Blackened Salmon while I was in the store and whipped up a fresh fruit salad really quickly while the salmon was cooking in the oven. I literally made this from start to finish in 20 minutes, and I only used 5 ingredients. It can’t get easier than that! All you really need to do is chop and mix.
I’m a huge fan of mixing sweet with salty, so the fresh mangos and berries in the salsa were super delicious with the slightly spicy blackened salmon. I found them right next to the frozen aisle and they even had samples out so I made sure beforehand that they tasted really good. π
I think I underestimate recipes that use so few ingredients and are made quickly. It’s so much less stress and in cases like this, they taste fantastic! I have to ditch the more complicated recipes for easier ones like this during the week. No one would be able to tell I spent so little time making this! π

Fruit Salsa
Prep Time: 5 minutes
1 Β½ cups blueberries
1 cup strawberries, diced
2 mangoes, diced
1 cup diced red onion
lime juice of 1 lime
How-To:
Rinse blueberries and strawberries. Combine all ingredients in a bowl and stir. Easy peasy!
