I know it’s been summer for almost two months but it feels like it has only hit Indiana for the last few weeks! We had such a stormy summer season with very mild weather… I loved and hated it at the same time. I’ll never say no to mild weather, but rain really sucks because it puts my grilling plans on hold. Summer is for grilling, am I right? I have so many good memories of just getting together with friends, grilling out, and just basking in the sun enjoying the company during the summer.
Now that the summer is about over it’s blazing hot outside! I’ve been busting out the grill and eating outside as much as I can. Speaking of… I had a nice surprise on my porch once I finally decided to go out and clean it up after it had sat untouched for months. I asked my husband to go open up the table while I cooked and the next thing I knew he was running for the hills! Turns out there was a HUGE black spider inside of it as well as a wasp’s nest… that unleashed all the wasps when he picked it up. My poor husband. 😂😂😂 I’m such a mean wife, I just sat looking out the door laughing hysterically while I watched him run haha! Thankfully he didn’t get stung. π
For the time being I’m stuck with my grill pan until we get the wasp situation out of control. Ever since I bought it at Walmart I’ve been hooked. How have I lived without a cast iron pan this long?? It’s amazing! Since my husband did all the work clearing out our back porch, I thought I would make him something extra special to say thank you. He is Egyptian and he loves his juices… and I can see why. Fruit is so delicious and a staple drink there. I made him some of his favorite banana juice (Moz w Laban) but this time I kicked it up a notch. π
My husband is kind of like a kid in that he is obsessed with candy. In particular, marshmallows and licorice. It’s not uncommon to see him sitting with a jar of Kraft Jet-Puffed Marshmallow Creme just eating the stuff straight out of the container. So to make this juice extra special, I threw a few heaping tablespoons of the stuff into it. And THEN I broiled some of it in the oven until it got super crispy and gooey and threw it on top. Best wife of the year award? I think I’m biased… but I would vote for me haha!
To be honest it was as much as a treat for me! This stuff is so good. And the crispy marshmallow cream on top is amazing. It’s easy an simple, and cooks up on the grill in no time. My kind of recipe! Things have been so crazy around here with the start of the school year that I don’t really have much daylight time once I get home. I don’t think people realize just how much teacher’s have to do to prepare for a new year… but let’s just say I haven’t ate lunch this week and I’ve been taking my work home with me every evening. And doing it until bedtime. π Luckily the Walmart Marketplace has a lot of easy sides that don’t need preparation. I grabbed a bag of caesar salad, some baked beans and Amish potato salad and we were ready to go!

Banana Juice with Caramelized Marshmallow
Servings: 2
Ingredients
4 bananas, chopped (frozen if you like it cold and thick!)
1 cup milk
8 heaping tbsp Kraft Jet-Puffed Marshmallow Creme
Preparation
Roughly chop bananas or pull off pieces into a blender. Add milk and 6 tbsp of the Kraft Jet-Puffed Marshmallow Creme. Blend until smooth!
Preheat your oven to broil. Spoon remaining 2 tbsp of the marshmallow creme onto wax paper and pop under the broil until browned to your liking. Place on top of banana juice and enjoy!
