Happy 4th of July! I’m so glad to have a day off of work. I know the day should be for celebrating, eating lots of good food and watching the fireworks but I spent most of the day just cleaning up my house. We’re set to move next week and between fasting and working my house has taken a bit of a nosedive in the cleaning department. Although I didn’t go big this year for the 4th of July, I did take some time to make one of the easiest 4th of July recipes ever… 4th of July ladyfinger cakes! It seriously doesn’t get easier than this. 😀
Ever since I made my tres leches cake a few weeks back, I have been obsessed with homemade whipped cream. 2 ingredients and 5 minutes to fluffy goodness? Yes please. I made a huge batch and I eat it with everything… on my yogurt, with fresh berries and now slathered all over this ladyfinger cake. This 4tho f July recipe is so easy and doesn’t need baking which is perfect because when it’s hot outside I don’t want anything to do with the kitchen!
This recipe doesn’t need many ingredients or much prep time, but it will look beautiful and patriotic on any 4th of July table. So ditch the heat and have more time for fun by giving this no bake recipe a try. 🙂
4th of July Ladyfinger Cake
a handful of raspberries, blueberries and strawberries
Homemade Whipped Cream:
1 pint heavy whipping cream
4 tbsp sugar
Whip heavy whipping cream with the sugar on high for 5 minutes, or until stiff peaks form.
Place three ladyfingers on the plate. Alternate layers of whipped cream, berries, whipped cream and ladyfingers. After three layers, decorate the top as you wish with the berries. Enjoy immediately, or chill in the fridge until ready to eat!
